Terroir : Clay-limestone soil.
Grape variety: Cinsault 70% - Grenache 20% - Syrah 10%
Viticulture: 5-20 year-old vines, organically grown, harvested early and mechanically in several passes to ensure perfect ripeness, freshness and natural acidity.
Vinification: The grapes undergo a short maceration in vats before being pressed. After cold settling, the bled juice, which is separate from the first pressings, ferments for around 15 days before being blended.
Maturation: 4 months in stainless steel vats.
Visual : Pale pink colour.
Nose: Floral notes, pear and white peach.
Palate: Fresh attack, fresh fruit, faithful to the nose with a hint of spice, lively wine.
Cellaring: Drink young.
Pairing: Perfect with spring salads, marinated fish, ceviche, sweet and slightly spicy dishes.
