Traditional vinification, using only indigenous yeasts in the vineyard. Each grape variety is vinified separately, then comes the important moment of blending the 3 grape varieties to give the unique character of Crémant du Clos des Quarterons.
Ageing: In accordance with the Traditional Method, the base wine is bottled and the second fermentation (or "prise de mousse") takes place in the bottle. To obtain fine bubbles, we leave our bottles to rest on laths for a minimum of 24 months.
Tasting notes: Pale yellow colour, aromas of white flowers and honey. On the palate, ripe fruit with a hint of lemon.
Operating temperature: 8º C
Serving suggestion: Perfect as an aperitif, but its complexity and fine bubbles will also go well with fish-based starters, poultry or a white nectarine fruit gratin sprinkled with almonds.
Ageing: 5 to 6 years
