This wine reveals subtle woody notes accompanied by aromas of blueberry, blackcurrant and liquorice, as well as spices and leather. Its delicate, silky structure, marked by a lovely roundness, gives way to a finish of chestnut cream. A wine of remarkable depth and complexity that will go perfectly with lightly spiced red meat dishes.Fairly shallow sandy-clay coluvial soils at the mouth of the Combe de Lamarron, on the boundary between the Saint Restitut plateau and the Lauzon plain; Location known as "Le Planas"; North-South planting; Average age of 60 years; Cordon de Royat pruning (6 spurs with two free eyes); Target yield: 30 hl/ha; Planting density: 4,500 vines/ha; Old vines producing only around 20 hl/ha.
Hand and machine harvesting at dawn when the temperature is coolest. Period varying from 20 September to 10 October, depending on the vintage. The grapes are harvested at optimum phenolic ripeness, so as to extract the best possible quality from the skins.
De-stemming, crushing and vatting; extraction by pumping-over and delestage for the Syrah and only delestage for the Grenache; long vatting period of 30 to 40 days; 12 to 20 months ageing in French oak barrels (wood from Allier) with 35% of new barrels for the Syrah and in concrete vats for the Grenache.

- - Palate : Velvety tannins linked to our sandy soils, notes of leather and blackcurrant, long finish of chestnut cream. Terrasse A l'Ombre should be enjoyed with stuffed poultry, mature cheeses, grilled meats and fresh mushrooms. This wine should be served at 17°C after airing for one hour.
