Terroir : Clay-limestone soil.
Grape variety: Rolle 100%
Viticulture: 5-20 year-old vines, organically grown, harvested early and mechanically in several passes to ensure perfect ripeness, freshness and natural acidity.
Vinification: Grapes destemmed and crushed. Direct pressing, cold settling followed by 3 weeks of spontaneous fermentation (indigenous yeasts) in stainless steel tanks.
Maturation: 4 months in stainless steel vats.
Visual : Pale yellow with green highlights
Nose: Pear and citrus fruit.
Palate: Faithful attack to the nose. Beautiful freshness, fruity and elegant.
Cellaring: Drink young.
Pairings: Goes well with spring salads, grilled fish or fresh goat's cheese. Serve between 10 and 12°C.
