Pale yellow in colour with green and golden highlights, with a typically Chenin character, its nose promises a floral and fruity blend of white flowers, citrus fruit, yellow fruit and dried fruit, enhanced by a gourmet touch of brioche. On the palate, this dry Chenin is both balanced and generous, with remarkable mineral tension. The finish is long and delicious. A truly exceptional Chenin!
Terroir: siliceous clay with flint on limestone bedrock, steep south-facing slopes.
Vinification and ageing: gentle pneumatic pressing, static settling for 30 hours, slow spontaneous fermentation with natural yeasts, no chaptalisation or malolactic fermentation. The wine is then matured for 16 to 18 months on fine lees in equal proportions in new barrels of 1, 2 and 3 wines, followed by a few months in vats or barrels depending on the vintage.
Food and wine pairings: fillet of Saint-Pierre, blanquette of monkfish, roast fennel.
