Terroir: deep, very stony soils, sandy-loam on the surface and then sandy-clay, located on the Mercurol and Beaumont Monteux plots.

Grape variety: 100% Syrah.

Viticulture: The vines are cultivated without chemical herbicides. No insecticides or pesticides are used, and treatments are kept to a minimum depending on weather conditions. Fertiliser use is deliberately low, and exclusively organic, in order to preserve the balance of the soil and the plants. Leaf thinning and green harvesting ensure optimum ripening of the grapes.

Vinification: The grapes are harvested by hand. In the cellar, the grapes are carefully sorted, crushed and partially destemmed. Vatting takes place in open vats for around three weeks, with precise temperature control and regular punching down and pumping over. Malolactic fermentation takes place in barrels, using indigenous yeasts.

Ageing: 18 months in barrels.
Visual : Red colour with garnet highlights.

Nose: A fairly powerful nose of red fruit, with light woody notes and a floral touch.

Palate: well-balanced, supple, with a clean attack of crunchy red fruit and fine tannins.

Cellaring: Drink young, up to 5/6 years.

Pairings: This wine goes well with grilled and roasted red meats, white meats, spicy or exotic dishes. Serve between 15 and 16°C.
