Direct pressing, cold settling followed by 3 weeks of spontaneous fermentation (indigenous yeasts) in stainless steel tanks.<\/p>\n<p>Maturation: 4 months in stainless steel vats.<\/p>\n<p>Visual : Pale yellow with green highlights<\/p>\n<p>Nose: Pear and citrus fruit.<\/p>\n<p>Palate: Faithful attack to the nose. Beautiful freshness, fruity and elegant.<\/p>\n<p>Cellaring: Drink young.<\/p>\n<p>Pairings: Goes well with spring salads, grilled fish or fresh goat's cheese.
